Pumpkin Spice Week: Day 3 – IIFYM Pumpkin Spice Protein Truffles!

If you’re looking for a recipe that super quick and simple to make, yet still packs a ton of flavour and protein all into a bite-sized portion, then today we have a treat for you!

IIFYM Vanilla Pumpkin Spice Protein Truffles!

These little things are perfect for that quick finger food to ward off hunger and satisfy those cravings… Just be warned, once you have one, it’s hard to stop!

IIFYM Pumpkin Spice Protein Truffles!

IIFYM Pumpkin Spice Protein Truffles

Ingredients:
– Vanilla Cupcake Whey Smooth Protein Powder (1.5 Scoops)
– Oat Flour (20g) [*just blend up oats to make oat flour*]
– 0% Vanilla Greek Yogurt (45g)
– Pumpkin Pie Spice (1tsp)
– Stevia (2g)
– Vanilla Extract (1/2 tsp)
– Vanilla Cupcake Whey Smooth Protein Powder (1/4 Scoop for drizzle)

Directions:
Mix all ingredients {except 1/4 Scoop protein for drizzle) in a large mixing bowl just until combined. Should make a dough like texture. Grab a bit of the mixture and roll into 6 even-sized balls, about 1 inch wide. Mix 1/4 scoop of Vanilla Whey Smooth with a little water to make an icing drizzle. Drizzle on truffles, Place truffles on a small dish or container and put in fridge to firm up about 10mins. Take out and devour!

Macros Per Serving (Makes 6 Servings):
Calories – 63
Protein – 9g
Carbs – 5g
Fats – 1g
